Chicken Parmesan Zucchini Boats

Chicken Parmesan Zucchini Boats Ingredients:

● 4 medium zucchini:
● 1 lb. ground chicken:
● 1/4 teaspoon salt:
● 1/4 teaspoon ground black pepper:
● 2 garlic cloves, minced:
● 1 cup pasta sauce:
● 1/4 cup grated parmesan cheese:
● 1/2 cup shredded mozzarella cheese:
● sliced fresh basil for topping:

Chicken Parmesan Zucchini Boats Time Stats:

● Prepares in 15 minutes
● Cooks in 45 minutes
● Ready to eat in 1 hour

Chicken Parmesan Zucchini Boats Directions:

1. ) Preheat oven to 400 degrees F.
2. ) Spray a 9×13 inch baking dish with cooking spray.
3. Place a large non-stick skillet over medium-high heat.
4. Add the chicken and break it apart with a spoon.
5. Add the salt and pepper. Cook for 8 to 10 minutes, until chicken is cooked through. Stir occasionally and break down the chicken into small chunks.
6. Reduce the heat to low. Add the garlic to the chicken.
7. Cook 1 minute stirring often.
8. Add the pasta sauce. Cook 3 minutes, stirring occasionally.
9. As the chicken cooks, cut the zucchini in half, lengthwise.
10. Use a spoon to scoop the seeds and center out of each zucchini half, leaving a 1/4 inch thick zucchini boat.
11. Place the zucchini in the baking dish cut-side up.
12. Spoon the chicken mixture into the zucchini boats.
13. Press the mixture down into the zucchini using the back of the spoon.
14. Sprinkle the zucchini evenly with the parmesan, then the mozzarella cheese.
15. Cover the baking dish with foil.
16. Bake for 35 minutes.
17. Sprinkle with fresh basil and serve.

  Make a flavorful side dish of sautéed zucchini using just six ingredients. Make and share this recipe of Zucchini to your friends and family!
 

Zucchini Saute Ingredients:

  • 1 tablespoon vegetable oil:
  • 2 tomatoes, chopped:
  • 1 onion, sliced:
  • 2 pounds zucchini, peeled and cut into 1 inch thick slices:
  • 1 green bell pepper, chopped:
  • salt to taste:
  • 1/4 cup uncooked white rice:
  • ground black pepper to taste:
  • 1/2 cup water:

Zucchini Saute Time Stats:

  • Prepares in 20 minutes
  • Cooks in 25 minutes
  • Ready to eat in 45 minutes

Zucchini Saute Directions:

1.) Heat oil in a saute pan over medium heat.
2.) Add onion, and cook and stir for 3 minutes.
3.) Add tomatoes, zucchini, and green pepper. Stir.
4.) Season to taste with salt and black pepper.
5.) Reduce heat, cover, and simmer for 5 minutes.
6.) Stir in rice and water. Cover, and cook over low heat
for 20 minutes.

Directions for Roasted Cauliflower Rice:

1.) Preheat oven to 450 degrees F (230 degrees C).
2.) Line 3 baking sheets with aluminum foil and lightly spray with cooking spray.
3.) Fill a food processor 1/4 of the way with cauliflower pieces.
4.) Pulse 8 to 12 times until cauliflower is the size of rice grains.
5.) Transfer to a large bowl. Repeat with remaining cauliflower pieces.
6.) Drizzle avocado oil over cauliflower “rice”; toss until well-distributed.
7.) Spread 2 1/2 cups of the rice in an even layer on each lined baking sheet.
8.) Roast rice until golden, about 16 minutes. Remove from oven, stir well, and spread out again.
9.) Return to oven and roast for 6 minutes. Remove from oven, stir well, and spread out again.
10.) Continue roasting until browned, about 5 minutes more.
11.) Season each sheet of roasted rice with 1/4 teaspoon salt and place in a large container.

  • 1 (15 ounce) can black beans, undrained
  • 1 (15 ounce) can kidney beans, undrained
  • 1 (15 ounce) can pinto beans, undrained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 tablespoon cumin
  • 1 1/2 tablespoons dried oregano
  • 1 1/2 tablespoons dried basil
  • 1/2 tablespoon garlic powder

Directions Veggie Vegetarian Chili:

1.)Heat the oil in a large pot over medium heat. Cook and stir the garlic, onion, and carrots in the pot until tender. Mix in the green bell pepper and red bell pepper. Season with chili powder.
2.) Continue cooking 5 minutes, or until peppers are tender.
3.) Mix the mushrooms into the pot. Stir in the tomatoes with liquid, black beans with liquid, kidney beans with liquid, pinto beans with liquid, and corn.
4.) Season with cumin, oregano, basil, and garlic powder. Bring to a boil. Reduce heat to medium, cover, and cook for 20 minutes stirring occasionally.

  • 1 1/2 cups chopped fresh mushrooms
  • 1 (28 ounce) can whole peeled tomatoes with liquid, chopped
  • 1 (15 ounce) can black beans, undrained
  • 1 (15 ounce) can kidney beans, undrained
  • 1 (15 ounce) can pinto beans, undrained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 tablespoon cumin
  • 1 1/2 tablespoons dried oregano
  • 1 1/2 tablespoons dried basil
  • 1/2 tablespoon garlic powder
Veggie Vegetarian Chili

Directions for Veggie Vegetarian Chili:

Heat the oil in a large pot over medium heat. Cook and stir the garlic, onion, and carrots in the pot until tender. Mix in the green bell pepper and red bell pepper. Season with chili powder. Continue cooking 5 minutes, or until peppers are tender. Mix the mushrooms into the pot. Stir in the tomatoes with liquid, black beans with liquid, kidney beans with liquid, pinto beans with liquid, and corn. Season with cumin, oregano, basil, and garlic powder. Bring to a boil. Reduce heat to medium, cover, and cook for 20 minutes stirring occasionally.
